In the final section of the lama that runs alongside the Masseria Pezza Caldara, a few steps from the Masseria L’Ovile, there is a quarry once used for the extraction of the tuff. Disused for over thirty years and currently owned by the City of Ostuni, the quarry - which covers about 2 hectares - is now a re-naturalized environment where you can find the typical habitat of the dune environments, wetlands and the lame of the Park. The area is characterized by specimens of Juniper oxycedrus and phoenician, by maquis shrubland with its characteristic flora, by garrigue areas with thyme that covers entire banks of tufa, by rushes that to get bogged down. Inside the cave there is a part planted with olive trees, as well as fig trees, vines and other old varieties of fruit.
In the past years, through collaboration between the Park, the City of Ostuni and the ARIF (Regional Agency for the activities of Irrigation and Forestry), carried out interventions for the rehabilitation of the landscape and nature. The site also had a key role in the project "Bolle di Riserva", which aims to produce natural soaps with organic olive oil of the ancient olive groves of the park, and essences, extracts and infusions of herbs. The project was designed and implemented as part of the regional call "Principi Attivi, 2010" by the cultural association Labo Naturae, in partnership with the Park; in this way a business project joined the project of restoration of an abandoned area.
The quarry also hosts hives, that during the thyme flowering period allow the gathering of honey of great value.
