In order to protect the landscape of olive groves and its oil, in the farms of the Park organic olive oil is produced, with a label saying "by centuries-old olive groves of Puglia" pursuant to art. 7 of 14 LR 2007, a provision which provides for a series of measures to protect the monumental olive trees. This reference aims at protecting the agricultural landscape of ancient olive trees through the enhancement of extra virgin olive oil obtained from monumental plants. Around this idea a community of growers arose; they share the mission of the protection of the agricultural landscape, biodiversity, organic farming and legality. This project for the promotion of the oil of the olive groves sees the collaboration, alongside the growers, of the farms of the Agricultural Institute Pantanelli of Ostuni, the Apulian cooperative Libera Terra, Slow Food and the cooperative of organic producers of Alce Nera.
Other projects have put together a plurality of actors working in various ways in the rural areas of the age-old olive groves, to enhance the system of environmental resources, cultural and productive land eg: Oil road PDO Collina di Brindisi, Road of the Agricultural Park of Secular olives, the Bio itinerary of the Via Traiana, the Community of monumental olive trees in Puglia.
