ORGANIC DURUM WHEAT PASTA, VARIETY SENATORE CAPPELLI

The durum wheat of the variety Senatore Cappelli is obtained from crosses dating from the beginning of the last century; Today it is grown organically inside the arable farms in the Park. The entire process chain is certified as "organic". The variety Senatore Cappelli, with its characteristic black color, was genetically selected by Nazareno Strampelli in 1915; in the name, it pays homage to the Marquis of Abruzzo Raffaele Cappelli, who was elected senator in the early twentieth century and promoted an agrarian reform that led to distinguish the durum wheat from the common one.

Already in the first decades of the last century the nutritional qualities of this variety of wheat were taken into serious consideration; it has actually a higher amount of amino acids, vitamins and minerals than the other groats spread in the market, and a lower percentage of gluten. Nevertheless, the cultivation of wheat Senatore Cappelli was gradually abandoned in favor of more productive varieties: this was due to its height (up to 1.80 meters), which made it subject to the phenomenon of the lodging (the folding down to the ground of herbaceous plants ). However, due to its nutritional characteristics and strong adaptability, this variety was reintroduced into the territory by virtuous companies, which have started producing high-quality organic bread and pasta, exported all over Italy.
